SUMMER DINNER - Sausage and Veggies Skillet with Bell Peppers, Zucchini, and Corn

Equipment

  • Large skillet A 12-inch skillet is ideal.

Ingredients
  

Sausage and Aromatics

  • 1 lb sausage Mild or spicy, your preference
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced

Vegetables

  • 1 large Bell pepper Any color, sliced
  • 2 medium Zucchini Sliced
  • 1 cup Corn kernels Fresh or frozen
  • 2 tbsp Olive oil

Instructions
 

  • Remove sausage from casings and brown in a large skillet over medium heat.
  • Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Add bell pepper and zucchini to the skillet and cook for another 5 minutes.
  • Stir in corn and olive oil. Season with salt and pepper to taste.
  • Continue cooking until vegetables are tender-crisp, about 5-7 minutes more.
  • Serve hot and enjoy!

Notes

This recipe is easily adaptable to your favorite vegetables. Feel free to add other veggies like mushrooms or squash.
