Summer Frito Corn Salad

Ingredients
  

Corn and Veggies

  • 2 cups Frozen corn thawed
  • 1 cup Chopped red bell pepper
  • 1 cup Chopped black beans rinsed and drained
  • 1 cup Chopped red onion

Dressing and Crunch

  • 1 cup Fritos corn chips crushed
  • 1 cup Lime juice freshly squeezed
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Cumin ground

Instructions
 

  • In a large bowl, combine the thawed corn, red bell pepper, black beans, and red onion.
  • In a separate bowl, whisk together the lime juice, olive oil, and cumin.
  • Pour the dressing over the corn mixture and toss to coat.
  • Gently fold in the crushed Fritos corn chips.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  • Serve chilled and enjoy!

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
