Instructions
In a large bowl, combine the thawed corn, red bell pepper, black beans, and red onion.
In a separate bowl, whisk together the lime juice, olive oil, and cumin.
Pour the dressing over the corn mixture and toss to coat.
Gently fold in the crushed Fritos corn chips.
Season with salt and pepper to taste.
Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Serve chilled and enjoy!
Notes
For a spicier kick, add a pinch of cayenne pepper to the dressing.
