  • 2 ripe Peaches sliced
  • 4 Slices Bread good, sturdy bread; Sourdough, Challah, Multigrain, or thick white bread suggested
  • 2 Tablespoons Ricotta Cheese optional, adds creamy layer. Use 2-4 Tablespoons.
  • 1 Tablespoon Honey sweet drizzle
  • 4 Slices White Cheddar Cheese or more, to taste
  • 2 Tablespoons Butter for crispy crust

  • First things first, get your peaches ready. Wash them, slice them up, and set them aside. You want nice, thin slices, but not so thin they fall apart.
  • Now, let's build your sandwich masterpiece. Grab two slices of your chosen bread. Spread butter evenly on one side of each slice. This buttered side is what's going to hit the pan and turn golden and delicious.
  • On the unbuttered side of one slice of bread, start layering! Place a slice or two of white cheddar down first. This helps the cheese melt nicely against the warm bread.
  • Next, arrange your beautiful peach slices over the cheese. Don't be shy, pile 'em up (but not too high!).
  • If you're using ricotta, dollop spoonfuls of it between the peaches and cheddar. It melts into little pockets of creamy goodness.
  • Now for the sweet part! Drizzle that lovely honey over the peaches and cheese.
  • Add your remaining white cheddar slices on top of the peaches and honey. Cheese on both sides helps hold everything together as it melts!
  • Place the other slice of bread on top, with the buttered side facing outwards.
  • Heat a non-stick skillet or griddle over medium heat. This is key – medium heat ensures the bread gets golden and the cheese melts through without burning anything.
  • Carefully place your assembled sandwich into the warm skillet.
  • Cook for about 3-5 minutes per side. Watch it closely! You're looking for that beautiful, deep golden brown color on the outside and gooey, melty cheese and warm peaches on the inside.
  • Once it's perfectly toasted on both sides, carefully remove it from the pan. I like to let it rest for just a minute before slicing – it helps everything settle.
  • Slice in half (the classic diagonal cut is a must!) and serve immediately. Get ready to fall in love!
