Taco Mac and Cheese

Ingredients
  

Pasta & Cheese

  • 1 lb Elbow macaroni
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese

Taco & Sauce Ingredients

  • 1 lb Ground beef (or turkey)
  • 1 packet Taco seasoning
  • 1 can (10 oz) Diced tomatoes with green chilies drained
  • 4 cups Milk
  • 0.25 cup Cream cheese
  • 0.25 cup Sour cream
  • 0.5 cup Chopped green onions for garnish
  • Salt and pepper to taste

Instructions
 

  • Cook elbow macaroni according to package directions.
  • In a skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Stir in the taco seasoning and diced tomatoes with green chilies. Cook for 2-3 minutes.
  • In a large pot, combine the cooked macaroni, ground beef mixture, milk, cream cheese, and sour cream. Stir until the cream cheese is melted and the sauce is smooth.
  • Stir in the cheddar and Monterey Jack cheese until melted and combined.
  • Pour the mac and cheese into a greased 9x13 inch baking dish. Top with chopped green onions.
  • Bake at 350°F (175°C) for 20-25 minutes, or until golden brown and bubbly.
  • Serve immediately with optional toppings such as tortilla chips, jalapeños, cilantro, or diced avocado.

Notes

Adjust the amount of taco seasoning to your preference. For a spicier mac and cheese, add some chopped jalapeños.
