Ingredients

1lbElbow macaroni
2cupsShredded cheddar cheese
1cupShredded Monterey Jack cheese
Taco & Sauce Ingredients
1lbGround beef (or turkey)
1packetTaco seasoning
1can (10 oz)Diced tomatoes with green chiliesdrained
4cupsMilk
0.25cupCream cheese
0.25cupSour cream
0.5cupChopped green onionsfor garnish
Salt and pepperto taste
Instructions
Cook elbow macaroni according to package directions.
In a skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
Stir in the taco seasoning and diced tomatoes with green chilies. Cook for 2-3 minutes.
In a large pot, combine the cooked macaroni, ground beef mixture, milk, cream cheese, and sour cream. Stir until the cream cheese is melted and the sauce is smooth.
Stir in the cheddar and Monterey Jack cheese until melted and combined.
Pour the mac and cheese into a greased 9x13 inch baking dish. Top with chopped green onions.
Bake at 350°F (175°C) for 20-25 minutes, or until golden brown and bubbly.
Serve immediately with optional toppings such as tortilla chips, jalapeños, cilantro, or diced avocado.
Notes
Adjust the amount of taco seasoning to your preference. For a spicier mac and cheese, add some chopped jalapeños.
