taco seasoning

shredded cheddar cheese

sour cream

Preheat oven to 400°F (200°C).
Wash and pierce potatoes several times with a fork.
Bake potatoes for 45-60 minutes, or until tender.
While potatoes bake, brown ground beef in a skillet over medium-high heat. Drain excess fat.
Stir in taco seasoning and water; simmer for 5 minutes.
Once potatoes are cooked, cut them lengthwise and fluff the inside with a fork.
Spoon the taco meat mixture into the potatoes.
Top with cheddar cheese, sour cream, green onions, and diced tomatoes.
Notes
For extra flavor, consider adding a dollop of guacamole or salsa.
