Ingredients
  

Wet Ingredients

  • 1.5 cup watermelon chunks
  • 0.5 cup butter, softened (1 stick)
  • 2 eggs

Dry Ingredients

  • 0.75 cup sugar
  • 2 cup flour
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup raisins (optional)
  • 1 tsp red food coloring (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, combine the watermelon chunks, softened butter, eggs, and sugar. Mix well.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the raisins and red food coloring (if using).
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, use a seedless watermelon. The bread will be moist, so store it in an airtight container at room temperature.
