  • Grater For grating the squash

Ingredients
  

Squash Mixture

  • 2 medium Yellow Squash Grated
  • 1 cup Breadcrumbs Panko recommended
  • 1 egg Egg Lightly beaten
  • 1 teaspoon Garlic Powder

Seasoning

  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Olive Oil For brushing

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Grate the yellow squash using a grater.
  • In a large bowl, combine the grated squash, breadcrumbs, egg, garlic powder, salt, and pepper.
  • Mix well to combine all ingredients.
  • Shape the mixture into small tot shapes (about 1 inch in diameter).
  • Lightly brush the tots with olive oil.
  • Bake for 20-25 minutes, or until golden brown and tender.
  • Serve immediately and enjoy!

Notes

For extra flavor, add some grated parmesan cheese to the squash mixture.
