Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Grate the yellow squash using a grater.
In a large bowl, combine the grated squash, breadcrumbs, egg, garlic powder, salt, and pepper.
Mix well to combine all ingredients.
Shape the mixture into small tot shapes (about 1 inch in diameter).
Lightly brush the tots with olive oil.
Bake for 20-25 minutes, or until golden brown and tender.
Serve immediately and enjoy!
Notes
For extra flavor, add some grated parmesan cheese to the squash mixture.
