  • 1 lb cooked shrimp, peeled, deveined, and tail off can buy pre-cooked
  • 0.5 cup cucumber, diced
  • 0.5 cup tomatoes, chopped cherry or Roma tomatoes
  • 1 small jalapeño, deseeded and finely chopped adjust to taste
  • 0.25 cup red onion, diced
  • 2 tablespoons cilantro, chopped
  • 0.5 cup chunky salsa mild, medium, or hot
  • 2 tablespoons chunky salsa mild, medium, or hot
  • 1 large avocado, diced ripe but not mushy
  • 2 limes, juiced or more, to preference
  • salt and black pepper to taste

Instructions
 

  • Grab a medium-sized bowl. Toss in your cooked shrimp, the diced cucumber, chopped tomatoes, finely chopped jalapeño, diced red onion, and the chopped cilantro. Give it a gentle stir to get acquainted.
  • Now, pour in that delicious chunky salsa and squeeze in the fresh lime juice.
  • Gently fold in your diced avocado. We want those beautiful green chunks to stay intact and add that wonderful creaminess without turning into mush.
  • Time to taste! Season generously with salt and freshly ground black pepper. A good pinch here and there makes all the difference.
  • Give everything one last, careful mix until all those vibrant ingredients are beautifully combined. And voilà! Your stunning salad is ready to be devoured.

Notes

The avocado might brown a little due to oxidation, but a little extra squeeze of lime juice before storing can help keep it looking fresh. Give it a gentle stir before serving again.
