Ingredients
  

Dressing

  • 0.25 cup mayonnaise Use your favorite kind!
  • 3 Tbsp fresh lime juice Freshly squeezed is key
  • 2 Tbsp minced fresh cilantro If not a fan, swap for parsley or mint
  • 1 Tbsp silver tequila Adds a subtle, intriguing note. Can be omitted or substituted with extra lime juice.
  • 3 tsp granulated sugar Balances out the tartness of the lime
  • 0.25 tsp salt To enhance flavors
  • 0.25 tsp black pepper For warmth

Coleslaw Mixture

  • 14 oz bag shredded coleslaw mix Shortcut for shredded veggies
  • 0.5 cup shredded red cabbage Adds color and crunch
  • 0.33 cup thinly sliced green onions For mild oniony bite and green hue

Instructions
 

  • In a medium-sized bowl, combine mayonnaise, fresh lime juice, minced cilantro, silver tequila, granulated sugar, salt, and black pepper. Whisk until smooth.
  • In a larger bowl, toss together the shredded coleslaw mix, shredded red cabbage, and thinly sliced green onions.
  • Pour the prepared dressing over the coleslaw mixture.
  • Gently toss everything together until all ingredients are coated in the dressing.

Notes

Fresh lime juice is essential for the best flavor. Taste and adjust seasoning before serving. Can be made ahead by preparing the dressing separately and tossing with the slaw just before serving. Store leftovers in an airtight container in the refrigerator for up to 1-2 days; the cabbage will soften over time.
